Grapes sourced from Paarl on mostly clay-loam soils. The vines are managed to yield below 6 tons per hectare.

Winemaking

Grapes were handpicked and cold-soaked for 24 hours. Fermentation was initiated with selected yeaststrains and kept under 26°C. Malolactic fermentation was completed in tanks. 80% of the wine wasmatured for 12 months in six-year-old 225L barrels and 20% in new 225L French and American oakbarrels. The components were then specially selected, blended and bottled.
